‘Mama Said to Eat my Fruits & Veggies’ Muffins


  • 1 cup whole wheat flour
  • 1/2 cup regular flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 cups shredded organic zucchini (about 1 medium peeled zucchini)
  • 1 1/2 tsp vanilla extract
  • 2 TBS olive oil
  • 1/2 cup pure maple syrup
  • 1/3 cup unsweetened organic applesauce
  • 1/4 cup unsweetened almond milk (or cow’s milk)
  • 1 cup frozen organic blueberries


Preheat oven to 350. Prep a mini muffin tin: put a splash of olive oil on a paper towel and go over the mini muffin tins to prevent sticking. Add all dry ingredients together in a bowl: Whole wheat flour, regular flour, baking soda, baking powder, cinnamon and salt. Set aside. Peel zucchini and grate with a medium cheese grater. In a separate bowl mix all wet ingredients: shredded zucchini, vanilla extract, olive oil, applesauce and almond milk and mix until combined. Add dry ingredients slowly to the wet ingredients until evenly mixed. Fold in frozen blueberries. Spoon the combined mixes into the mini muffin tin and cook for 20 minutes. Once done, use a spoon to gently remove the muffin onto a cooling rack and let sit for 5-10 minutes. Enjoy!
